At what serving temperature are the recipes calculated?
When designing your recipe, you will be asked to specify the serving temperature for your ice cream in your display case. If you're unsure how to check this, be sure to watch this video. Calculations will be based on this temperature. The best results are achieved at -13°C, though we have clients who use slightly higher temperatures, like -11°C. For gelato and sorbets, we recommend using -13°C, as this temperature allows for the full spectrum of flavors and textures.
