Which ingredient properties are used to determine plasticity?
The algorithm takes into account various parameters, including types of sugars, fats, and proteins. It also considers whether the ingredients are plant-based or animal-based, whether the proteins have been denatured, whether water stabilization is present in fruits, and many other factors. It's important to note that we often lack precise mathematical formulas for calculating these properties, as some parameters are determined by specially trained neural network models, which were trained on thousands of real ice cream recipes (both successful and those that failed, which we created and analyzed during research). Thanks to our experience, our model is highly effective in predicting plasticity for a given recipe.
